Welcome to the world of baking! Today, we'll be making a classic tea cake recipe that has stood the test of time - the Victoria Sponge Cake.

First, preheat your oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.

In a large mixing bowl, cream together 1 cup of softened butter and 1 cup of sugar until light and fluffy.

Add in 4 eggs, one at a time, mixing well after each addition. Then, mix in 1 teaspoon of vanilla extract.

Sift in 2 cups of all-purpose flour and 2 teaspoons of baking powder. Gently fold the dry ingredients into the wet mixture.

Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

While the cakes are baking, make the filling. In a small bowl, mix together 1 cup of heavy cream, 1/4 cup of powdered sugar, and 1 teaspoon of vanilla extract.

Once the cakes are done, let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Once cooled, place one cake layer on a serving plate and spread the filling on top. Place the second cake layer on top and dust with powdered sugar.

Slice and serve this delicious Victoria Sponge Cake with a cup of tea for the perfect afternoon treat. Enjoy the simple and timeless flavors of this old-school tea cake recipe. Happy baking!
